Turkey Pot Pie

Okay, here is another recipe to use up your turkey leftovers just like I promised. This is another big favorite in my house. Everyone is happy when I make a pot pie. I seldom make just a small one in a pie pan I usually make more pie crust and make a big one in a 9x13 baking dish. A small pie size would never be enough for all the turkey pot pie lovers in my house. You can also opt to use a store bought ready to bake pie crust.

Ingredients
  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 3 carrots, chopped
  • 4 tablespoons flour
  • 4 cups chicken or turkey stock
  • 2 potatoes, peeled and diced
  • 2 cups shredded turkey
  • 1/2 cup frozen peas, thawed
  • 1 prepared pie crust
  • 1 egg, lightly beaten
Directions

Preheat oven to 350 degrees F.

Melt butter in saucepan and cook chopped onion until tender. Stir in celery and carrots and cook for 2 minutes. Stir in flour and cook for 2 minutes. Add chicken stock and bring to a simmer. Add potatoes and simmer until tender. Stir in turkey and peas. Pour mixture into a casserole pan. Top with pie crust and brush with egg. Bake for 30 minutes until crust is golden.


Pie Crust Recipe

2 1/2 cups unbleached all-purpose flour
1 teaspoon table salt
2 tablespoons granulated sugar
13 tablespoons unsalted butter , cold, cut into 1/4-inch pieces
7 tablespoons vegetable shortening , chilled
4 - 5 tablespoons ice water

1. Mix flour, salt and sugar in food processor fitted with steel blade. Scatter butter pieces over flour mixture, tossing to coat butter with some flour. cut butter into flour with five 1-second pulses. Add shortening and continue cutting in until flour is pale yellow and resembles coarse cornmeal with butter bits no larger than small peas, about four more 1-second pulses. Turn mixture into medium bowl.

2. Sprinkle 4 tablespoons of ice water over mixture. With blade of rubber spatula, use folding motion to mix. Press down on dough with broad side of spatula until dough sticks together, adding up to 1 tablespoon more ice water if dough will not come together. Shape dough into two balls with your hands, one slightly larger than the other. Flatten into 4-inch-wide disks. Dust lightly with flour, wrap in plastic, and refrigerate for 30 minutes before rolling.



Turkey Asparagus Bake

Okay, I promised you more Thanksgiving leftover recipes so here is another one. This one is possibly my favorite one. Do not forget to keep checking for more.


The Sauce
  • 6 tablespoons butter
  • 1 onion diced
  • 6 tablespoons flour
  • 1 cup turkey broth
  • 2 cups milk
  • 5 tablespoons Dijon mustard
In a medium sauce pan heat butter and onions until the onions are translucent. Add the flour and continue to cook until the flour is well blended and bubbly. Then add in the broth, milk, and mustard. Continue to cook the mixture until it thickens a little and is bubbly. The mixture can then be taken off the heat and set aside.


Turkey Asparagus Bake


Now you can assemble the dish. If you want to be fancy you can wrap the leftover turkey breast around bundles on asparagus. I could care less about that so I just layer it all. In a 9x13 baking dish layer asparagus and then turkey at the bottom of the pan. You can then pour the sauce over the top and bake in the oven with foil over the top at 375 for about 30 minutes.

Sometimes I change the recipe around and add a layer of mushrooms before the turkey. I have also been known to sprinkle some swiss cheese over the top at the end and bake another few minutes uncovered until the cheese gets bubbly. I am sure that you could come up with some new ideas too.


Thanksgiving Casserole

I love Thanksgiving but I love the leftovers more. For years I have been coming up with new ways to use the leftovers. I decided that for the next couple of posts I will do some of my leftover recipes. The first day after Thanksgiving there are the most leftovers so I do a kind of Thanksgiving Shepherds Pie.

The recipe is quite simple. First I butter a 9x13 baking dish. Then I make a layer of leftover stuffing at the bottom. If we happen to have those cranberry raisins laying around I add some in the stuffing. This time of year we usually do because James loves them in Oatmeal Cookies. Next I layer some dark meat turkey. I have many other recipes that call for any white meat that is leftover so for this one I only use the dark meat.

I always make corn for Thanksgiving so I add some leftover corn next. Now you add some leftover gravy to the top of the meat. There are times that I have ran out of gravy but I always boil the carcass to make broth so worse case scenario I have to make a little gravy. The top then gets covered with mashed potatoes. You bake this dish at 350 degrees for about 45 minutes or until the top browns. You can sprinkle some paprika or other spices to the top if you would like it to have a pretty look.

All Thanksgivings are different so some years I will run out of stuffing or mashed potatoes. The beauty of this dish is that you can change it any way you like. If you are out of potatoes just put the stuffing at the top. You will then still have a pretty topping.

My family loves this dish and it is a nice and easy meal which is nice after all of the cooking and cleaning of Thanksgiving.

During the holiday season we need to also remember to give gifts to charities and other needy individuals. This year many organizations are having a hard time helping as many people because people are not able to donate as much as other years.

I would like everyone to remember one more group of people that need donations. The families of our heroes in the military are also heroes themselves. They sacrifice much of their lives also. Women go without their husbands and often times have to raise their children alone. Children go without a parent for sometimes a year or more.

Christmas can be a very hard time of year when families have a loved one in the military and they are away. Not only are they unable to spend the holidays together but they also struggle with money. Military families are not paid nearly enough for all of the hardships they go through and can use all the help they can get.

Thanksgiving Fun & Games

So what will your family be doing on Thanksgiving? For most families Thanksgiving means lots and lots of football. Some kids love football and others have no interest in it. A great holiday gathering can turn very bad, very fast if kids get bored. A great holiday with family is when you keep kids occupied so there are less chances for them to get bored and get into trouble. I would like to share with you some ideas of how to keep kids busy this Thanksgiving.

Pin the Football in the Goal Post

This first game is a Thanksgiving / Football version of playing pin the tail on the donkey. Kids can have a blast and stay occupied for quite a while with this one. Even the smallest and least athletic child can score in this game. The kids can take turns being blindfolded and sticking the football up. Remember to turn the kids around a few times after they are blindfolded so they are not sure where the goal post is. This is what makes it harder to score and the game even funnier.


Find The Turkey Egg


Eggs are not just for Easter. Turkeys lay eggs so why not have an egg game for Thanksgiving? In this game one person leaves the room while a hard boiled egg is hidden. When the person comes back in the room they have to find the egg. To make it more fun the people in the room will gobble when the person gets closer to the egg. The gobbles get louder as the person gets closer. What could be more fun than a room full of friends and family gobbling?

No School

Well, Thanksgiving break started. The kids had their last day on Tuesday and they do not go back until Monday. I LOVE when they have no school. Yes, I like that I have 3 little helpers to get extra house work done but I also love all the fun we can have. I sometimes secretly wish I could have my kids home playing with me all the time.

Tuesday night we were tired so we did not stay up too late. Wednesday we slept in nice and late and then got a lot of cleaning done around the house. We did stay up nice and late last night though. I love staying up late with the kids.

I think tomorrow we will start going through closets and packing up summer clothes. Yes, I am sure we should have done that already but I do everything at the last minute. The hardest thing about going through closets is that Neona wants to keep everything. She has some kind of emotional connection with clothes and insists that everything still fits her. Maybe I will assign her a different job somewhere else in the house that way we can get it done faster.

How Do You Turkey?

Turkey day is getting closer and closer. I can not wait to eat me some turkey. We still are not too sure what we will be doing that day but I know we will be making a turkey even if we do not have Thanksgiving here.

Moving all the time means that we never really live very close to family members. James' dad is the only one that will be around for Thanksgiving so it is up in the air. Some holidays we go there and some he comes here. It all depends on weather and health. He was just here for a turkey and ham dinner a few weeks ago so we shall see.

Yes we just had a big turkey dinner but we have them more often than most families. We usually have turkey several times a year. We like having big dinners all together. The grocery store had buy a ham get a turkey free that week so that was all we needed to inspire us to have a big dinner.

I do not do a normal rosemary and sage turkey but what really is a normal turkey? Everyone has their own "style". I do a simple turkey with very few steps. I mix butter with Cajun seasoning mix and pack that under the skin. I also use a bit to butter up the outside of the turkey. Other than that I just stick an onion cut in half up the birds butt. I do not think it adds too much flavor to the bird but it makes the drippings taste better.

I do not stuff my turkey ever. My mom always said it would dry out the bird if you cooked it long enough to kill the poultry germs that get into the stuffing. I rarely listened to my mom but that is one thing that I followed. My mom always baked stuffing in separate baking dishes.

I do roast my turkey a bit differently though. I like making a big breakfast on holidays since that is the only time we are all home and not in a hurry. This means that I always start the turkey later than I would hope. I speed up the roasting process by starting the turkey at 500 degrees for 30 minutes and then dropping the temperature to 350 degrees.

I learned this method from Alton Brown on Good Eats. I love his show. He always has these big scientific reasons things work and why you should do things that way. When it comes to making turkey this way all I care about is that it takes about an hour off of the cooking time. This means that I do not have starving people wondering why I did not start the turkey sooner.

Who has not heard of the Naked Brothers Band? My kids are a bit old for them but I have definitely heard of them. There are girls all over the place going nuts over them. Every time I turn around I see a commercial about them.

I may not know everything about them but I know they are very popular, they are a band, and they have a show on Nick. Those that watch the show religiously are anxiously waiting for a new TV movie entitled "Operation Mojo".

Mr Bluelight

What do you think of when you think of Mr Bluelight from Kmart? I think of when I was little and went shopping with my mom. I can remember stopping whenever they would come on the load speaker. Everyone would stop what they were doing to hear what bluelight special was being announced. Everyone loves a good deal.

Back then my one brother was a cashier at the local Kmart. That was the first year he bought everyone real gifts for Christmas. Most likely it was because he got an employee discount or maybe he used the Kmart Layaway.

I loved the gift he got me. A Star Wars movie came out that year so he got me a stuffed Princess Kneesaa. I actually still have it. He also purposely mixed up the tags on our parent's presents. I do not remember what my mom got but I remember that my dad unwrapped his gift to find a womens nightgown. My brother was always a funny guy.

Kmart still has great things and exclusives. There is something for every member of the family. This year I would like to get some new ornaments so I have checked out their Celebrations by Radko ornaments.

Thanksgiving Placemats


These cute placemats can be made out of construction paper or foam sheets in fall colors. All you need to do is cut the foam sheets or paper into strips and then let them start weaving them together. You can also cut shapes out to add if you want them more fancy.

Kids love making things that can be enjoyed and admired by everyone at family gatherings. Placemats are the perfect thing for kids. Everyone will be able to see what they made and even the most crowded table has room for placemats.

This cute idea can be done by young kids or older ones. The idea is to take raw corn and break them into small pieces. They can then be rolled in paper plates full of paint. Younger kids can use normal paints and plain paper or construction paper. Older kids can use fabric paints and real fabric or ready made placemats. Then the placemats can be saved for many years to come.

Fall colors would be great for Thanksgiving. You can even make stripes in two different directions to make it look like a woven design.

This year Sears has decided to bring back layaway. This Christmas comes as many families are facing a lot of financial difficulties. Sears is taking action by offering layaway to people that would like to use that option. It is limited to just the holiday season but that is perfect.

Layaway gives people a way to pick out all of their gifts at once and then make payments on them. They are then able to take them home when they have them all paid off. This can be very helpful for people that do not have credit cards or have their cards all maxed out. This option also eliminates the extra expense of interest rates.

If I were to pick out gifts and do the Sears Layaway I think I would get the girls some new gold earrings. They can only wear real gold or they break out. I think I would also get James some more tools. He got a new tool box recently so he finally has room for more. In the past we did not have the room so his tools always ended up everywhere. I think I would get the girls some new clothes too. They keep growing out of everything they own.

Muppets take over Today Show


















I turned on the Today Show this morning and found this.

Here are Meredith Vieira and Matt Lauer as Muppets. I loved the Muppet Show so I really enjoyed it.

The Today Show was taken over by Muppets for a little while and it was a blast. I have been so busy that I had no idea that it was going to happen. The Muppet take over was to help announce the Muppet Whatnot Workshop at FAO Schwarz.

A Whatnot is a Muppet that was not a regular character. They were like extras in filming. FAO Schwarz now has a Whatnot Workshop where you can build and buy your own Whatnot. It is a pretty cute idea but I will not be spending $90 to buy the one I made online.

Cookware and Bakeware Sale

This is the season for sales. I love this time of year for many reasons but the sales and discounts are a huge plus. Right now Sears is having a Cookware and Bakeware Sale. They have name brand products that are know for quality. I can think of many things that I would love to buy.

I would love one of those waffle makers that flips over as it cooks. The girls would love that too. I need a new food processor and bread maker since I lost parts of my old ones during the moves around the country. I could use a new slow cooker. I love anything kitchen related.

I always hear about woman that hate getting gifts that are more gifts for the house. I love getting them. I feel guilty spending money on some things so I love getting them as gifts.

Sears also has a sale on the Basic Essentials 8-pc roster set. I could use a new one of those too. The final price after the rebate is $4.99. Now that is a sale. It is only from 11/5 to 11/8 though so you have to hurry.

I am not normally someone that likes shopping but when it comes to kitchen stuff or decorating I love shopping. I could shop for things for the house forever.

Pinecone Turkey Placecards


Remember being in school and making pinecone turkeys?

They are still a great craft for kids to make at Thanksgiving time. They are cheap to make and kids get to have fun and be creative. I think that I would still have fun making them.

You can make some as decorations or you can make them into placecard holders for your Thanksgiving dinner too. Kids will love making this craft even more when they learn that everyone will see them and they will be used for the dinner table.

For an added treat the kids can write on the back of each one. Just a few things about the person who is on the card that they are thankful for. What a great way to start a dinner of thanks!

Kmart Layaway


This Christmas will be a very hard one for many families. With the economy they way it is many families are having a hard enough time coming up with enough money to pay their bills. Christmas will be a be a very big strain on many people's budgets.

Years ago many stores had lay-away and that was how a lot families purchased their gifts. It gave people the ability to set things aside and then make payments on them. Through the years most stores have gotten rid of their lay-away programs.

The only department store that you can still find it is Kmart Lay-Away . Kmart knows that the state of the economy has many people unable to get credit cards or they have credit cards that are already maxed out. Lay-away gives families the ability to make payments on things so by Christmas they can have them paid off and ready to bring them home. It also helps you be sure that you get what you really want as gifts. When you have to save until the last minute you are only able to buy what is left at the store. We all know how fast some things run out before Christmas.

I was checking out the Kmart website today and found some neat things. I forgot how many nice things they have for good prices. Everyone loves a good deal.

The kids are already making Christmas lists so why can't I? I would really love a stand mixer.

Raspberry Walnut Chicken


Necessity really is the mother of invention. What people fail to mention is that mothers usually are the ones that have the necessity since they are always so busy so actually in the end it is really mothers that are the mother of invention.

James and I were shopping the other day and he saw this salad dressing. Well he bought it and really liked it.

Then comes last night...

We were rushing around to get ready for Trick or Treating when James asked me what I had planned for dinner. Trick or Treating was from 5:30-7:30 so I did not plan anything for dinner. I figured that we would just come home and find whatever was laying around. James said he was starving from working all day and wanted a real meal after all of that walking around. So I had to quick come up with a miracle.

We had chicken breasts in the fridge and potatoes and onions in the pantry so I told James that I could make Greek Chicken. He really does not like it as much as the rest of us any more but he agreed. I think he has gotten sick of oregano.

I put the chicken breasts in the roasting pan and started cutting up the potatoes and onions. James then came in the kitchen and said that I should try it with the new raspberry walnut dressing. So I placed the potatoes and onions around the chicken and then mixed up the liquids. I added about a half a cup of the dressing to 2 cups of water (I made a huge pan with 6 chicken breasts and 8 potatoes) and then poured it all over the chicken and potatoes. I then covered the whole thing in foil and put it in the oven at 350 degrees.

The whole thing took me maybe 15 minutes to prepare. Then off to Trick or Treating we went. We of course left a bowl of candy on our porch for kids that came here. The girls had a blast and we got tired out. The fire department even had a big thing and gave out flashlights. That was probably the girls favorite part.

We then headed home to check out the candy. The girls and James went through the candy while I finished dinner. I took off the foil and turned the oven up to 450 degrees. I kept basting it with the liquid that was left until it all browned nicely. During that time I was able to quick make some Jiffy mix biscuits since James eats way too much bread but he loves it.

The family loved the chicken and potatoes. Even Nicole went on and on about how wonderful the chicken was and she hates almost everything. She even had seconds. I loved that I spent very little time making it and still had a big dinner in the end.

If you are interested in the original Greek Chicken dinner I think that one is just as yummy and easy. I love dinners that go in the oven and can be forgotten. They are also the perfect thing when you are busy doing things with the kids and won't be home until dinner time.
