Ice Cream Sandwiches
I have been thinking lately about what memories really stand out in my mind of when I was a little girl during the summer. I have been wanting to recreate those memories with my girls. One of the things that I look back on fondly was making ice cream sandwiches with my mom.
We used the square cardboard containers of neopolitan ice cream. We would open it from the side so that you could get a stripe of each flavor. Then we would cut slices of ice cream. They were the perfect size to be sandwiched between graham crackers. I would always get excited when my mom said that we could make them. I bet they are even better with the chocolate graham crakers they have now.
Now that they have many kinds of premade cookies and endless ice cream flavors making ice cream sandwiches can be even more fun. You can make little ones or big ones. You can come up with any flavor combinations. You can even roll the sides in chocolate chips, nuts, sprinkles, or coconut. All you need to do is to soften some ice cream and then spread it on some cookies or graham crackers. Another simple and fun to eat summer treat.

The moist tollhouse cookies are the BEST for this project. Me & my boyfriend found them & sandwiched a nice helping of chocolate chip cookie dough ice cream in the middle.yummy!

I worked a summer at Cedar Point and made made of these ice cream sandwiches. Personally, I liked the chocolate chip rolled in sprinkles better than the thin ice cream bar sandwiches sold in the stores. The big cookie sandwiches taste better and they seem to melt slower - great for little kids who eat their ice cream slower than it melts!
